Jerk Marinade

Jerk Marinade

Ingredients

  • 1 whole Scotch bonnet pepper (or jalepeno/serrano)
  • 2 scallions, roughly chopped
  • 1 ½ inch knob fresh ginger, roughly chopped
  • 3 garlic cloves
  • 1 tsp dried thyme leaves
  • 1 tsp ground allspice
  • 1/8 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 tbsp brown sugar
  • 3 dried bay leaves
  • ¼ cup lime juice
  • 2 tbsp Jamaican rum
  • ¼ cup soy sauce
  • 2 tbsp vegetable oil

Instructions

Mix all this stuff up and you're good to go!
